Mexican Style Quinoa and Black Beans
A yummy, healthy main dish with black beans and quinoa.
Ingredients
Directions
- Rinse raw quinoa in cold water. Use a coffee filter so the seeds do not slip through a sieve.
- Put a cup rinsed quinoa and 1 and 1/2 cups water in pot. Bring to a boil and lower heat. Cover and cook on low for 15 minutes.
- Chop all vegetables and place in glass bowl.
- Add olive oil and canned tomatoes.
- Blend quinoa with the mixture and add cumin.
- Squeeze lime into mixture. Garnish with cilantro.
- Let chill until mixture has "set" (about 10-15 minutes).
- Eat and enjoy!

Yum! One of my favorite recipes EVER and i do a lot of cooking! It's so easy to make, it's inexpensive to prepare and it's so filling. I usually combine it with an avocado, although it does raise the calorie count. However, it's just too delicious to make the calorie count the reason i don't eat it!!!

Great recipe, easy to do. The lime adds a fresh taste for a summer dish. I am in phase 1 of the Fat Smash diet and so far, it is my favorite recipe and one that I will continue to eat after my diet. Thank you so much for posting it.

What a great combination! Best complete protein with no animal fats. It's a good substitution to eating meats. I heard a lot of great things about quinoa as one of the highest sources of magnesium and potassium. This is great for a variety diet that focuses on lowering bad fats and increasing the fiber in the diet. Thank you for posting it.

quinoa is a complete protein, provides a ton of protein and fiber when compared to brown rice. However, it also has much more fat and more calories than brown rice so I'm not sure if it's appropriate for phase 2.
