A delicious low fat muffin recipe.

- In a large bowl, combine the flours, baking powder, baking soda, sugar, cinnamon and salt.
- In another bowl, combine the egg whites, apple sauce, lime juice and orange juice; add to the dry ingredients just until moistened.
- Stir in the mango, banana and nuts.
- Fill paper-lined muffin cups two-thirds full. Bake at 350 °F (175 °C) for 20-25 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before removing from pans to wire racks.

These were really great, I baked these to cook up some mangoes which were too sour for my taste. Note to other users: the recipe includes nuts that aren't in the ingredients list. I suggest crushed macadamias to go with the tropical theme.

Just made these and oh. my. god. I think I'm in love. My son, the pickiest eater on the planet, even loves them. Only problem is they kind of stuck to the paper. I used baking sweetener instead of sugar, perhaps that's why..? Otherwise, awesome recipe.
