Just made these using the original recipe of 1 egg, 1 cup peanut butter, 1 cup sugar, 1 tsp. vanilla and they turned out perfect. I used a tablespoon of dough for each cookie and it made 18 cookies. Once baked, the cookies are about 2 inches in diameter. These were perfect for my baked goods/sweets craving that I have been having. And my kids love them too.

Per the Paula Deen website, here are the correct measurements:
1 egg
1 cup sugar, or 1 1/3 cup sugar replacement (recommended: Splenda) (only 1 c goes into cookies)
1 cup peanut butter, creamy or crunchy
1 teaspoon vanilla extract

These are good. I guess I made smaller cookies because I got 30 out of the receipe, but it works for me. Still satisfying and less calories, fat and all that other stuff! BTW, even the kids liked them.
