A soup that's a real comfort food without being heavy on the calories.
Ingredients
Directions
- In a large pot, sauté celery, carrot and onion in olive oil until soft but not browned.
- Add lentils and stock (or water).
- Cook with pot cover tilted over medium heat for about 45 minutes or until lentils are tender.
- Stir occasionally and add more liquid if needed.
- Add spinach and sausage (optional) and cook for another 15 minutes.
- A healthy squeeze of lemon juice really finishes the soup!
- Season to taste with freshly ground salt and pepper.

Numbers appear all wrong, from prep time to nutrition facts, 9792 mg of sodium per serving, Is that possible? Amount of sodium in 1 teaspoon of salt is 1,150 mg, ergo this is = to about 9 teaspoons of salt/serving.

I am assuming that the no. of portions are wrong, because it starts with 6 cups of bouillon. If it is correct, how would you call a soupwith 9792 mg of sodium healthy?

i'd like to try this but the 3264 mg of sodium is a death sentence. Is there a way to lessen that?
