Jalapeno Pepper Jack Stuffed Chicken Breast
A quick and delicious chicken breast dish that comes with a kick.
Ingredients
Directions
- Preheat oven to 350 °F (175 °C).
- Roll or pound out the chicken breast to 1/4 inch.
- Spray the chicken breast with the olive oil spray and season both sides.
- Take a thin slice of the cheese and place in the chicken breast.
- Roll the chicken breast like a burrito and place a toothpick to secure it in place.
- Top with red pepper rings and spray one more time.
- Cook for 15-20 minutes.

Reviews
I made this using boneless, skinless chicken thighs as we prefer dark meat. I used green pepper coz I didn't have any red...a touch of garlic powder. About 40 minutes in the oven, and YUUUUUUUMMMMM. Kids love it. I love it. Will show up regularly on the dinner table.

It turned out great. I ended up using colored toothpicks (all I had) and so the chicken was a little colorful when it was done. And I don't think I seasoned it enough - I was afraid I would over-power it. Next time, I'll be daring and add more.

Quick, Simple and Der-Licious!!! I didn't use cooking spray on the chicken. I did use one and a half slices each of pepper jack cheese in each breast and seasoned with salt, pepper, garlic and a seasoning blend that I rubbed in the breast. I also cooked it for 25 minutes. Lovely!!

Had a version of this for dinner last night. I also added diced onion to the stuffing of cheese. I didn't used red pepper, because I didn't have any. I just used more diced onion on the top. Both me and my fiance LOVED IT!!!!! One of the things you can only make one serving of or you'll just go back for more. LOL. We will definitely be having it again. Pepper Jack and chicken are staples in our house.

I made this last night for dinner and it was delicious. I substituted the salt and pepper for garlic and herb spices and used Sargento Pepper Jack cheese (half a slice for each piece of chicken). I will def be making this again!

This was really good! I'll definitely make it again. I altered it a little by rolling the chicken in taco seasoning and cooking it in a skillet for 6 min each side instead of the oven. Awesome recipe! :)
