Warm, hearty soup with terrific flavors.
Ingredients
Directions
- Chop the carrot, onion and garlic quite small and add to a big soup pan.
- Add all the other ingredients except the vinegar and pepper.
- Bring to a boil for about ten minutes and then let simmer for about 80 - 90 minutes, stirring occasionally but more often towards the end.
- Turn off the heat and stir in the red wine vinegar and season with pepper. I find it doesn't need salt thanks to the tasty stock but feel free to add a pinch.
- Serve hot.

I love lentil soup, but I think the nutrition information is WAY off, especially the fiber which is easy to count. The bulk of fiber will come from the lentils, onions, and carrots, which barely equal 15 grams and this recipe claims to serve 10. No doubt it is low calorie but also low fiber and low protein. Also, lentil are fast cooking.
