Directions
- Place 1 cup of dry beans in large pot and add 6 cups of water.
- Dice onion and add to the pot. Put over medium heat for 3 hours.
- When beans are near done, dice Canadian bacon, garlic and sauté in olive oil in a large skillet.
- Once garlic and bacon start to brown, add remaining ingredients and stir fry until tomatoes start to break down.
- Add ingredients from skillet to bean pot.
- Cook together for at least another 30 minutes or until beans are entirely cooked.
