A classic Lebanese salad often eaten as a starter or light lunch.
Ingredients
Directions
- Set the oven at 400° F (200° C). Place the bread squares on a baking sheet and toast them in the oven for 8 minutes or until lightly browned; set aside.
- In a bowl, toss the cucumbers, tomatoes, radishes, scallions, mint, and parsley.
- In another bowl , whisk the lemon juice, salt, pepper, olive oil, and sumac until blended. (Sumac is an essential spice made from the dried, powdered berries of the sumac tree.)
- On a large platter with a raised rim, arrange the lettuce leaves.
- Spoon the cucumber mixture over the leaves. Scatter the bread pieces on top.
- Sprinkle with dressing and more salt and pepper.

I am Lebanese, for an authentic Fattouch, we add a large onion cut in thin semi circular slices, about three times as much parsley,not even chopped but only the leaves same for the mint not chopped and we mix most of the lettuce so it soaks the dressing. 3Tbs Olive oil may not be enough, unless you use extra virgin olive oil. Sumac is a must!
This is a great meal not just a salad. Lebaneses never add feta cheese to it, it will chnage the flavor. As you are adding Pita bread it is not good for phase one diet. I eat it without the pita bread for phase one.
