Elbows with Fresh Tomato Sauce
A quick dinner recipe with pasta elbows and diced tomato sauce.
Ingredients
Directions
- Boil water for pasta. Dice tomato and mince both onion and garlic.
- Once water boils, add pasta. Heat a sauté pan with olive oil.
- Add onions and garlic to hot pan. Sauté till the onions are soft and clear.
- Add the diced tomatoes and basil.
- Sauté for approximately 5 minutes on medium heat. Add salt and pepper to taste.
- Drain elbows and put them back in the pot.
- Toss with tomato sauce and serve.
- A sprinkle of parmesan is a nice but not necessary addition.

I made this tonight with 2 modifications. 1.) I used whole wheat rotini and 2.) I cut the salt to 1 tsp. It was really very good! My boys even had seconds. Thanks for sharing!
