Ingredients
Directions
- Combine cornmeal and salt. Add boiling water.
- Cover and let stand 10 min.
- Whisk in milk, melted butter, baking powder, egg and flour.
- Cook on a griddle.
- Use about 3 tablespoons of batter per pancake.

Reviews
These were fantastic. I did a double batch, and used large eggs, skim milk and canola oil (instead of butter, same measurements) rather than what the recipe called for. I also used 4 Tbsp per pancake rather than 3. The double batch made 19 pancakes.
