Cool Green Goddess Avocado Soup
A slimmed down version of cool, creamy avocado soup. Take advantage of the healthy fat in avocados for a meatless meal.
Ingredients
Directions
- Reserve 6 sprigs of cilantro for garnish. Chop remaining cilantro.
- Cut avocado and scoop fourths into blender. Add all remaining ingredients to blender, except milk. Blend well until just smooth.
- Pour milk into avocado mixture and blend to combine (do not over mix). Taste soup and adjust seasonings.
- Serve immediately or refrigerate 2 hours to serve chilled soup. Garnish each bowl with a sprig of cilantro (and a baked blue corn tortilla chip).
