Ingredients
Directions
- Mix cucumber with garlic and salt. Let it sit for 20 minutes to marinate.
- Rinse under cold water and drain.
- Mix with sugar, vinegar and red chili to taste. Let it sit for 5 hours to marinate or more.
- Enjoy!

Reviews
On of my favorite Chinese side dishes-- I use it as part of a light lunch. Since I've cut out refined sugars to as little as possible, I don't add sugar in my own version anymore. Apple cider vinegar adds a nice sweet aromatic quality, and is a good sub for seasoned rice wine vinegar.
