Not sure the carb count on this is correct. I just made this for supper. I used 24 oz. of cauliflower instead of 20, and only half of all the other ingredients, and the total carb count for the entire dish is 56.5. It only made 4 one-cup servings, so that made each serving about 14 carbs! Wow! That's a lot for one cup. The dish is very good, nonetheless. Half of the ingredients worked out just fine, btw. Here are the counts for mine: 24 oz. cauliflower: 16 carbs - 1/2 can cream of chicken: 12.5 carbs - 8 oz. sour cream: 24 carbs - 1 cup shredded cheddar cheese: 4 carbs.

I am going to add boneless, skinless, cubed chicken breast to this and try it. Will also use low fat or lite soup and low fat (2%) cheese.

Though I'm adding this to my cookbook; modifications to the recipe will have to be made to lower the carbs, as light sour cream has twice the carbs as regular sour cream, and your choice of cheddar cheese can effect the overall carb count as well.

Absolutely delicious! I made this recipe almost exatly, but only half the sour cream because I ran out, and to be honest it didn't feel like a super-healthy dish... very fatty. I would probably use reduced fat cheddar next time.
