Calexico Middle Eastern Omelet
This recipe uses culture fusion to make a yummy omelet!
Ingredients
Directions
- Using a cheese grater, grate 1/4 of a red onion and pan fry on medium heat using cooking spray. Once brown and translucent remove to a plate.
- Place 4 egg whites in the same pan and fry into a circle. Flip once the top has almost set.
- Once the egg has been flipped place hummus, avocado, salsa and the fried red onions on to half the egg.
- Fold the other half over the stuffing and cook a few more minutes until egg has firmed. Flip if necessary. Remove to a plate and sprinkle with just a tad of non-fat cheese.
