Ingredients
Directions
- Melt the butter in a large, non-stick fry pan.
- Add the Maltitol sweetener and heat on medium, stirring until it is blended and golden.
- The mixture will separate and then blend together again. Give it time for the color to darken, but don’t over cook.
- Remove pan from heat and sprinkle nuts on the top.
- Allow to cool. Cover and let set up. If you are in a hurry, hasten the cooling by setting the pan in a larger pan of ice.
- Cover and let set up. When the brittle is cooled, break it into pieces.
- Variations: add 1/4 cup unsweetened coconut. If you use walnuts instead of pecans you can deduct all the carbs. 1 cup of peanuts makes it peanut brittle.

I loved this!!! I used Swerve instead of malitol; the texture was a little crumbly but it tasted delicious. I think I just need more practice cooking with Swerve.

This sounded good but because of the typo, decided to add to my own cookbook and not share, since the recipe was already out here. (Note - is it not possible for the author to update the recipe to indicate a correct amount of butter?) Anyway - my calorie count came up different - and it's due to the fact that the author indicated that there are 24 teaspoons to a cup, but there are 48 teaspoons to a cup. Mine came to about 96 or 97 cals per serving. So haven't actually tried it yet, but sure sounded good!

Some have problems with maltitol some do not everyone is different. I would experiment with it and see how your body deals with it. No sense in denying yourself a tasty treat if you do not have to :)

I haven't tried this but it sounds yummy. However, I recently found out that maltitol is bad news for low carbing. Too bad, because it tastes great. Do your research before using it!
