Black Bean Cilantro Salad
Black beans with cilantro, lime, garlic and onion.
Ingredients
Directions
- Mince garlic and red onion.
- De-stem and chop cilantro. Careful not to touch the pepper - deseed and mince the hot chili pepper.
- Mix ingredients together in a bowl with the juice of the lime.
- Chop tomato. Remove seeds if desired.
- Drain and rinse canned black beans.
- Mix together all ingredients.
- Serve tossed with a salad or alone.
- Note: can also be used in a wrap and delicious with avocado.

I loved this salad. Paired it with a serving of stir-fried sugar snap peas, sliced tomatoes and a high fiber tortilla. Fabulous. I would definitely make this again. A very fresh taste.
