Balsamic Roasted Vegetables
A great veggie side dish with different types of peppers, squash, carrots, asparagus, zucchini and onion.
Ingredients
Directions
- Pre-heat oven to 450 °F (220 °C).
- Line a baking pan with foil.
- Cut and slice all vegetables.
- Season with fresh ground salt and pepper.
- Toss with olive oil and balsamic vinegar.
- Bake for approximately 20-25 minutes until vegetables are desired crispness.
- Note: vegetables should caramelize and be crispy.

Great mix of veggies. We didn't have fresh asparagus at our local store, so I used green beans. Delish!
