Baked Cauliflower with Tomatoes and Feta Cheese
This dish is enlivened with a strong flavor of tomatoes combined with the typically Greek usage of ground cinnamon.
Ingredients
Directions
- Heat the olive oil in a heavy-based skillet and sauté the onion and garlic for 3-4 minutes, or until the onion has softened.
- Add the chopped tomatoes, cinnamon and oregano and season with salt and pepper.
- Stir and simmer, covered, for 5 minutes.
- Preheat the oven to 375 °F (190 °C).
- Add the cauliflower to the tomato mixture, cover and simmer for a further 10-15 minutes or until the cauliflower is just tender. Remove from the heat.
- Transfer the cauliflower and tomatoes mixture to a large, shallow dish.
- Sprinkle over the lemon juice and grated feta.
- Bake for 45-50 minutes, or until the cauliflower is soft and the cheese has melted. Serve warm.

The amount of tomatoes is missing!
The answer is 8 tomatoes, peeled and chopped. We often cheat and use 3 16oz cans of diced tomatoes.

I love this recipe. I serve it with Greek Salad and the flavours are wonderful together. It has become one of my husbands favourite dishes.
