This egg salad makes for a tasty sandwich filling. Serve between two slices of wholemeal or wholegrain bread with lettuce leaves for a well-balanced meal.

Directions
- Peel the boiled eggs once cooled, and mash up in a bowl with a fork. Finely chop the celery stalk and parsley.
- Combine all of the ingredients in the bowl with the mashed egg and stir to combine. Season with salt and pepper to taste.
- Serve between two slices of bread and additional salad of your choice.
