“Mac” & Cheese

Cauliflower mac and cheese.

Ingredients

Directions

  1. Preheat oven to 375 °F (190 °C).
  2. Cut cauliflower into small pieces and steam until tender, approximately 5 minutes.
  3. Remove and strain.
  4. Melt cream cheese in a medium saucepan over medium heat. Whisk 1 cup cheddar cheese, pepper, garlic, and salt. Once cheese is melted remove from heat
  5. Transfer cauliflower to a 9x9" baking dish. Pour cheese mixture and toss to coat. Sprinkle remaining cheese and crushed pork rinds on top.
  6. Bake until bubbly, about 20 minutes.
