Dinner tonight was a whole bag of broccoli (3 servings), 4.5 ounces of chicken breast (1.5 servings), and a serious treat, a serving of couscous!! ALL of this (including a bit of parkay and the ketchup) was only just over 450 cal! I'm full and happy! Love!

Lunch for today and the next two days is a very "throw whatever you have into a pot" kind of meal. Luckily it turned out pretty great! Shrimp, lentils, kale, spinach, and mushrooms.

Dinner from yesterday. May look kinda barfy, but it was AMAZING. Pumpkin pie oatmeal!!! From scratch and under 300 calories. Yes!

Ceviche! 379 calories, 47 grams of protein. I LOVE it and will probably make it frequently through the summer as it is served cold. Shrimp, white fish, tomato, onion, avocado, cilantro, lemon and lime juice, garlic, salt, pepper, and chili powder.

I love that I live somewhere that donates produce instead of trashing it! I got all this for free yesterday! 3 spaghetti squashes, two heads of cabbage, some bok choy, a few heads of soft lettuce, carrots, cucumbers, another squash, and a lone tangerine!
