Just wanted to share my pretty salad! It was prettier before it rode to work with me and got partially eaten, but ya know.
Leftovers from spring rolls - lettuce, carrot, bell pepper, edamame. Topped with some chili sauce plus lemon + balsamic.

Probably my favorite dinner to make, albeit time consuming.. fresh spring rolls. Rice paper filled with cooked shrimp, red bell pepper, shredded carrot, shredded lettuce, and avocado. Dipped in sweet chili sauce and served with edamame. (1 serving
