Milk vs heavy cream...
Milk has more sugar in it and atkins restricts sugar. Sugar kicks you out of ketosis and and you stop burning fat for energy instead of carbs. Skim milk is even worse than full-fat milk on the Atkins plan...when they take the fat out it leaves more sugar in a glass. It is the ratio of fat to carbs (not protein to carbs) that puts you in ketosis and keeps you there.
