Woke up to a gain but that's ok..truckin' through it! Today is the last day of potatoes and my baby's first day back to school! I am not one of those mom's who can't wait for their kid to go back to school. I'm going to miss him! He is now a 6th grader! Wow time flies. :)

Almost 2 weeks ago, I started a pretty extreme diet. It is the diet Penn Jillette used to lose over 100lbs in a pretty short time. It has also been referred to as Penn's Potato Diet. The diet starts with 2 weeks of potatoes only. Nothing on them, just potatoes. This helps reset your taste buds and helps you transition into a more vegan diet. I am almost done with my 2 weeks of potatoes. (which I am beyond happy about) I have had great results so far. I've lost 16lbs so far. I have also noticed some pretty good health benefits. I'm not having to get up and pee several times a night anymore and I am feeling overall better everyday. So far, this has been a great choice for me! :)
