My husband and I started the diet because we each have about 40 pounds to lose. My husband has horrible family health history and he is on a medicine to lower his cholesterol & triglycerides already at age 33. Diabetes also runs in his family. Technically we didn't start the diet officially until February 10th, so our 2 weeks of phase 1 will be over on Feb 23rd. We are excited to start incorporating fruit and some grains into our diet, but have both agreed that the diet isn't too bad. I am surprised too, since my husband is a very picky eater and wouldn't eat any of the dressings they suggest to make with vinger and oil. Thankfully I found the South Beach Diet ranch dressing he can stand to make his salad and vegetables taste less like "dirt". We kind of are getting bored with the salads for lunch. Maybe I don't understand the diet, but it seems like according to the book they only suggest "light" lunches. We like the suppers, then I prepare a meat and a side vegetable and we usually have the ricotta cheese dessert or sugar free gelatin. I think my husband has lost about 6 pounds, but his yo-yos up and down, he hasn't followed it as closely as I have. I haven't strayed too much, just when I am making my sons peanut butter and jelly toast in the morning, I'll like the knife. That is about as much as I've strayed.
