I slipped yesterday. I was hungry and feeling unsure about the recipe I was cooking for a large amount of people, and ate handfulls of the chips my son was also eating. I tend to gravitate to crunchy food when I'm stressed, and I didn't talk myself into eating fresh vegetables or nuts instead. I wonder if it's water weight because I do feel a little swollen / inflammed around the ankles, plus I don't know if it's me, but the recipe was so salty in the end, that I regret not reducing the amount of salt or soy sauce that I thought was excessive compared to my own cooking.
I also consumed a couple of my son's fruit leathers for the sugar to keep me awake long enough to finish my work early last night. I told myself it's organic and natural, but contains too many natural sugars that feed fungus.

I was hungry all evening, and gave into cravings for chocolate yesterday by adding my son's ovalteen to a cup of almond milk. Perhaps having a chocolate smoothie for lunch will help. No change in weight despite consuming an excessive 1600 calories.

Finally some progress. I've lost a pound and having fewer sinus symptoms today, perhaps because it's been raining too.

I should have specified why I'm on such a restrictive diet.
My ophthalmologist told me to follow an Anti-inflammatory diet and go on some supplements because I have dry eyes and rosacea, which is essentially a plant based diet. So I cut out animal products from 4-5 to only 1-2 servings per day. It cleared my skin, I don't suffer from dry eyes as much, toe nail fungus is growing away, and my joints haven't ached since.
Then, I learned from my ENT specialist that I have a fungal infection in one of my sinuses from allergies and frequent sinusitis. So I saw a naturalpathic doctor in hopes to avoid surgery, who advised me on natural treatments and an anti-fungal detox diet for a month, which cuts all sugar, dairy, eggs, fruit (with exception to lemons, limes, grapefruit, and blueberries), and anything that could be turned into the sugar, including pasta, and glutenous grains such as wheat, well as mushrooms and molding nuts (peanuts, walnuts, pistachios, and cashews).

It's manageable by focusing on what I can eat, and I'm not hungry because I can eat vegetables all day. What is sad is that despite only consuming 1200 calories per day for the last 3 days, I haven't lost weight, not even initial water weight. Perhaps I've already detoxed excess water from the Anti-inflammatory diet.

Tofu Scramble with avocado, spinach, tomatoes, minced garlic, salt, and cayenne pepper cooked in avocado oil. Other than the amount of salt I put into it, it is actually appetizing being that tofu has an egg texture.
