Down 2 pounds, even tho I blew it last night and went way over my carb allowance.

I made WHAT into WHAT!?!?!
So, last night I made "mock potato soup".
Mock, because there were NO potatos in it. And my 4 kids had NO CLUE!!
bawwhahahahhhaha!!!!!
It was made of.....wait for it.....
CAULIFLOWER!!!!
Shocking!
I never ever thought that I could make a totally HEALTHY potato soup like that!!
I can't wait till my husband gets home, so he can try the leftovers!
My sweet neighbor came over to taste test it with me.
And she liked it so much, she wanted to lick the bowl clean! LOL!!!
So I sent her home with a big bowl of it for her husband and a little more for her!
I wonder if HE liked it!! haha. They are doing Atkins too, and it's SOOO awesome to have friends who are neighbors who are on this journey with us!!

Things I have learned about myself since I started Atkins:
1) I ate SO MANY carbs. I'm just astounded at what I was putting into my body just mindlessly eating, comfort eating, celebratory eating....I ate carbs and protein and tiny bits of veggies.
2) I CAN do this!
3) I'm not as hungry as I always thought I was. I was bored and eating to fill the space and time. bah!!
4) My children still eat a lot of carbs. I want to teach them to make good food choices now while they are young and fit and thin, so that they don't have this struggle with weight when they are older.
5) My mother was not a good Food Role Model to me....no wonder I got this way. Now, I'm not blaming her for my bad choices, but she does get a tiny bit of it, because she didn't lead me well.
6) I'm sleeping better with less caffeine.
7) I can not go long periods without eating, or I will eat something crappy. I need small healthy snacks thru the day to hold me over, and that's ok.
8) I do not like eggs as much as I thought I did. But I will survive.

I feel like I am spending much of my days searching online for yummy low carb recipes, and I'm not doing much else or keeping up with housework. It's like an obsession.
Should eating healthy REALLY be THIS MUCH work?? ugh

Well, I've lost a little tiny bit...but it isn't a gain or staying the same. I NEEDED to see that today....after I watched my teenage son eat PB&honey on toast and an orange, I was like screw this! I want FRUIT and PB and toast!!! So, instead I went and took a shower, refocused and weighed myself, to see a nice little loss. YAY!!!
Now, if only I could figure out some new breakfast ideas. I'm getting sick and tired of eggs, eggs, eggs.
But, again, I FEEL GREAT. It's hard to not listen to THAT when I want to eat a granola bar!
