Elliptical machine and calories burned
There is no way for a machine or HRM watch to be accurate across both genders, as well as all body types and fitness levels. Also metabolic rate is largely genetically determined.
I had what's called a "New Leaf" assessment, and found out exactly what my resting metabolic rate is (actually only 1215 cals per day, 1580 if you include some calories for my very sedentary lifestyle). The assessment also determines exactly how many calories I burn at what heart rate ranges (for example, between 134-144 BPM, I burn 7.9 cals per min, 4.5 of which are stored fat calories).
It's a great test, and I feel much, much better having super accurate information regarding my caloric output. No more guessing for me.

How Often Do you weigh yourself?
Once a week, before breakfast. Also, same clothes and same scale every time.

Chinese Buffet...
Have 1 or 2, just even it out with steamed veggies instead of tons of rice and other fried stuff.
