Why the Fat?
My colleague who introduced me to the ketogenic approach loads up on stuff like bacon, fatty cuts of meat and sausages. Uggh! Even when I ate meat I abhorred fatty pieces. I have been looking at many diet plans/ways of eating over the past month or so, and I am intrigued by the keto/LCHF approach, because I saw how my co-worker lost massive amount of weight in relatively short time (She is paraplegic, and does almost no exercise but lost over 100 pounds in a year or so).
My issue is that I have never been into using loads of fats. My low-carb morning smoothie is quite satisfying without any fat, but I toss in a tbsp of coconut oil just to keep the macros up. Likewise for the olive oil in my midday salad- I prefer my salads without any dressing. I would very much prefer to go without 'drinking' the oils and instead get my calories from cashews, almonds, etc, but that throws off my 20/20/60 ratio of carb/protein/fat. Why, exactly, is so much fat necessary? Is it:
1. To assist with satiety?
2. to make up the required daily calorie intake (I know that fats are incredibly calorie-dense)
3. Is it that our bodies have to be "trained" to treat fat as fuel in order to achieve ketosis? (I query this one because when I was having my daughter I went into ketosis without eating any fat, just because I was so nauseated that nothing would stay down.)

Any downward swing is a good thing.
In the past whenever I tried a drastic change in diet, I would rebound by getting these intense, near-uncontrollable cravings for cakes, cookies, chocolates, confectioneries and candies. Is it a coincidence that all the Carb-filled, Calorie-loaded temptations begin with C? 😃
This time around I decided to do things a little differently. I have been gradually reducing my daily carb intake. Yesterday I added 1/4 of a mango and 1/4 of an apple to my green smoothie breakfast. To my amazement it tasted too sweet! What on earth? How can something ever taste too sweet for sugar-loving me? Yayyyyy!
Flax and chia seeds are my new best friends. In addition to putting them in my smoothie, I have found this recipe that serves as a filling substitute for tortilla or bread (I omit the egg).

Facing a HUGE challenge
Yesterday I said farewell to the class of 2016 at our Secondary school. It was an emotionally challenging time as I have come to love many of those students. I saw them grow and develop from the oftentimes awkward 11 to 13 year olds who came in to us in 2011 into the confident, accomplished young men and women who crossed the stage to receive their certificates.
Among the parting gifts that many of them brought me were two huge huge chocolate bars, bags of Hershey's Kisses, and a lovely basket of assorted confectioneries. Wow! They really catered to my openly-acknowledged sweet tooth!
The 'me' of a month ago would have spent last night and today feasting on all that chocolate. Instead, yesterday I enjoyed the loving thoughts that accompanied the edible gifts, but passed on the eating pleasure to my daughter and her classmates. Today I am looking at the lovely bouquet of fresh flowers, the thank you cards and the wall plaques, and feel as satisfied as if I had gorged on the chocolates. I am also proud that at the post-graduation luncheon I refused all the high-carb foods and settled for a simple salad, sauteed vegetables and beans.
Now that I have passed that hurdle, I think that I will be able to give LCHF a try. I will have to make some modifications because I do not eat meat, fish, poultry and eggs. However I am now convinced that I have the willpower, in fact the WON'T power, to resist the sugars and carbs to which I was addicted.
