Tonight's dinner: Easy Enchilada Casserole & Chipotle and Cheddar Salad. 932cal. We subbed veggie crumbles for ground beef in the casserole, so it's even healthier and less calories than I'm claiming.

Dinner tonight: Potato soup and a grilled sandwich for a snowy snowy day. These are homemade, so I'm guessing 958cal.
What a super snowy day in the Twin Cities.....in October?!?!? What!?!?!?!?
Out our front window, the bottom is today, the top are some wild turkeys wandering through about a month ago.

What could be better on a kind of cold & snowy day than chili? How 'bout the Best Vegetarian Chili in the World (not my title) & air fried onion rings!!!!! Double helpings of both, and only 1181cal.
I love onion rings. These were just out of the bag and air fried, and they were better than most restaurants I've had. And truly much lighter, no oil used.
