I really started this diet on the 11th of July. Its going pretty good so far. I have lost about 2 lbs. and holding strong.
Here's a killer chicken recipe (south beach diet style) I have come up with. I hope you enjoy as much as I did!
Chicken Peek-A-Boos
2 skinless boneless chicken breasts
8 pieces thinly sliced ham (lean lunch meat)
½ cup fat free ricotta cheese
2 teaspoons low fat parmesan cheese (Grated)
1-2 teaspoons fresh or dried basil
2 tablespoons fat free cream cheese spread
1 teaspoon spicy brown or dijon mustard (optional)
2 tablespoons olive oil
salt and pepper to taste
Preheat oven at 375 degree F.
Combine cheeses, basil, and mustard in bowl. Mix until blended then salt and pepper to taste. Cut chicken breasts in half (like you would cut a loaf of bread). Using a meat mallet, tenderize and flatten chicken. Place 2 slices ham on chicken, cover completely. Spread ¼ of the cheese mixture on ham. Roll up chicken and ham. Use toothpicks to secure the chicken roll. In a frying pan (preferable oven safe) drizzle 2 tablespoons olive oil in pan. Turn heat to medium. Brown chicken rolls. Pop pan in to oven for 18-25 minutes or until center of chicken has reached 180 degree F. If you are like me and eat with your eyes first, you may sprinkle a bit or parmesan cheese and basil over the chicken before eating.
Let cool for 3-5 minutes so juices can be absorbed then ENJOY!
