Recipes
Low fat and low carb leaves you with a high protein diet and eventually kidney damage. Whatever diet you do, whether you go Low Carb High Fat or High Carb Low Fat keep your protein moderate. I would suggest High Fat Low Carb, and stick to whole foods as much as possible. Check out Healthful Pursuit on YouTube, and her blog has tons of recipes. Good luck!

Intermittent Fasting (IF) for women
I love IF, and periodically I'll do a 1-3 day water fast if I feel a little groggy after eating or if my food isn't digesting right. I'm almost finished The Obesity Code by Dr. Jason Fung and I have his second book with Jimmy More right after. I eat keto on my eating days. The weight is falling off. I also do 20/4 if I eat days in a row.

Water Fast
Some light resistance training during your fast (like body weight exercises) will actually help prevent that muscle loss during a fast. Have you read The Obesity Code by Dr. Jason Fung? I water fast for for my insulin resistance, too!

Before you beat yourself up for some weight gain, it could easily be bloat. Sometimes when your stress level increases, your body will hold more water. Just take some time to be kind to your mind and the body will follow.

Have you considered going keto? There's a channel on youtube by Leanne Vogel called Healthful Pursuit, and she has a blog called healthfulpursuit.com, she has a TON of information, especially on fasting with a HFLC diet. Check it out, and congrats on 16lbs! That's awesome.
