I really enjoy ribs! However, I enjoy them with a nice BBQ sauce, and it's hard to find one that's tasty and low carb. So, tonight, I've decided to take matters into my own hands and oven roast some baby back ribs with a homemade (sugar free) honey mustard glaze, low and slow as they say. The ribs smell great, and the glaze is making me wish they were already done. I'll be serving them up with a simple salad, topped with shrimp, and dressed with a Fire Roasted Poblano Ranch Dressing. Who says low carb is boring! Not me! :-)
Well, it was as tasty as I thought it would be! I'm looking forward to the leftovers tomorrow.

I like the J.J. Gargantuan Unwiches from Jimmy John's sandwich shop, but they can get to be expensive. I finally decided to make my own unwiches and, to me, they are just as tasty. By using a, de-boned, Sam's Club rotisserie chicken, and my own, other, meats, cheeses, and other assorted fillings, and wrapping it in romaine lettuce, I can make several, 3 or more, unwiches, for the price of one or two, that would normally be bought at Jimmy John's. :-) I should have did this a long time ago.

This was supposed to be a Frittata Friday. However, I've been marinating some flat-iron steaks in a mixture of extra virgin olive oil, Merlot, garlic, rosemary, green onions, and a bit of salt & freshly ground black pepper; for the past 4 days. I've heard about flat-iron steaks before, but I've never had one before, so I wasn't sure how this would turn out. They were on sale, so what better time to try them. The only thing I knew for sure was, not to cook it beyond medium rare. This is a steak that comes from the chuck, and they can be tough. Without a doubt, this was the best steak I've had in a while!!! I'm not sure if it was the long marination, or the fact that I followed the guidelines, and cooked it to a beautiful, and tender, medium rare; but served up with a salad, this was better than any frittata that I could have come up with. I think I've found my new favorite cut of beef, and I love a rib-eye steak, but this was better. I love it when an experiment turns out this well! :-)

A prior commitment kept me from making a frittata yesterday, but this is Soup-er Saturday, and I'm putting together a good one this time. Today's creation will be a Creamy Cauliflower Soup with Asiago Cheese, Broccoli Florets and a Smoky Pulled Pork. I have some Parmesan Crisps to float on top as croutons when I serve it up. As said, it should turn out pretty good, so I'm likely to make this one again. :-)
