Slow weight loss is frustrating, if not unexpected. I've always had trouble losing weight. I just have to stick with it. What I don't understand is how, if I am really exceeding my calorie intake by 1500-1800 calories per day -- that is, using more calories than I am eating -- I should be losing 2-3 pounds every 7 days. I'd like to lose 5 pounds per month. I don't think that's an unreasonable expectation. I'm hoping that with another few weeks of sticking to the diet, my metabolism will click in, and the weight will start coming off.
The reality is -- the way I'm eating right now, gradually shifting calories away from animal proteins and fats and toward high fiber grains, veggies and fruit, is the way I need to eat for the rest of my life. So I'm trying to be as creative as possible with the veggies and grains. Tonight I made pattypan squash stuffed with barley and trinity, plus a little grated parm. I'll bake it up tomorrow, and it will serve as my starch alongside fish and the last of my asparagus. I've also begun to be really successful using steamed cauliflower in place of rice or pasta. I had cauliflower with the turkey meatballs we had for dinner last night, and it was really good. We're supposed to have shrimp & grits with Creole sauce on Thursday -- and I'm going to skip the grits and go with cauliflower. It might be really weird or it might be very good. Have to see...

Best diet food discovery: Mi Rancho Thintastic Corn Tortillas! 35 calories each and so delicious. So last week I made tacos from leftover chicken breast in mole sauce, with a sprinkling of shredded cheese. Really satisfied my Mexican food craving. Thank goodness! It's a hard craving to manage, at least for me.
I've also become really attached to steamed cauliflower. I had tried cauliflower rice, and I didn't like it at all. But when I just steamed cauliflower -- it gets a really buttery flavor and gets soft. I just put curry or meatballs or whatever I'm eating as my protein right on top of the cauliflower, and I'm quite happy with it and don't miss the rice or potatoes.

So I'm patting myself on the back because even though I was totally undisciplined Friday night and Saturday, I got right back on my plan by Sunday -- and today I did really well. I'm in (or very close to) the "low" range for cholesterol, fat and carbs in my diet, and that feels really good. Plus I am getting all the fiber in as well. I think I can do this, so long as I don't expect rapid weight loss. I have to satisfy myself with slow, steady loss and with internalizing the diet guidelines I've set for myself for the long-term. If I can do that, then I think there's hope that I can keep the weight off this time. I hope so... I'm getting too old to do this all over again and again and again...
