Today is tough, I'm down a pound (which is good) but seeing how far I have to go really does a head-thing. I have to lose the equivalent of a waif model! I have to sweat off Kate Moss!!!! A very sobering thought, indeed. Every time I see a magazine model I think, "I have to lose more than the person weighs!" I will keep plugging at it (headed to work out) and will proudly loose the scale for a few weeks in the next CHALLENGE: Trust Fall - The Weight Loss Version. I'm becoming a little fanatical with these numbers instead of just being focused on the changes I already see in my body and clothing. Would I feel this way trying to lose 50 lbs or 80? Ok, done venting. Resigned to one-pound-at-a-time, one day at a time. I think I hear my theme-song playing, "This is it, this is it...<http://www.youtube.com/watch?v=C0uZBBvaKGc>" Don't you hear it?

Leftover firm tofu (from Wonton Soup adventure late last week). So today...Spicy Tofu and Vegetables over brown rice (really heavy on the veggies). It was sweet/spicy kinda like General Tso. Downright tasty and the husband and kids lapped it up -- although they moaned when I told them what was for dinner. I added some leftover grilled chicken to their portions and they ate it and the stir-fried tofu without incident. We all had to admit that it tasted a LOT like what we pay BIG money for when we all go out (which was usually twice a month -- maybe thrice). Much to my youngest son's chagrin, here's one more meal I'm going to have a hard time paying for in the future. (You have so much more control when you cook your own food). He hates to hear me utter the words, "I can make that!" They are his kryptonite! What about you guys? Any culinary exploits to keep your food fun? :D

It's Sunday! And my cheat...a
Coffee Cup Chocolate Molten Lava Cake
! Yes, you read it right, people. You prepare this dark chocolate batter in an 11-oz coffee mug and in a couple of minutes...Voila! Found this recipe for my weekly chocolate treat and saved calories for it all day today (so I'm still well within range). I should work out but, alas, methinks I will just sit here on the sofa, savor the flavor for another few minutes and then brush teeth for the night. Ah, yesssssss, technology is a wonderful thing. Complete and utterly sinful decadence in a little more than 90 seconds. And now the raging chocolate demon within will lie in wait for another seven days subdued and lolled into a chocolaty sleep. Night, All :D

My water numbers are down this week so I don't think I'm getting the flush I need. Couple that with a little more meat this week (poultry/fish) and I feel a little...well, full. Still only about 6 oz meat daily -- but I don't feel the way I did on my Vegetarian week with Vegan days. BUT, the scale is going down and for that I'm grateful. Calories stayed intact this week but I'm sitting right now a little thirsty this a.m. I still have some white flour and white sugar left in the pantry and guess what? It's STILL there! That means I'm not using either to go on cooking and baking explosions which is a very good thing. I made chocolate muffins earlier this week (only 12) and the last one was just eaten yesterday -- not by me. This is earth-shatteringly awesome for a family whose appetite would demand 4 doz and would have certainly eaten a full dozen (or more) the first night! Could there be a new mindset igniting within the walls of our home? People, we have lift off!

Snuck a weigh-in this morning (290.6) down another 5 lbs. Didn't log it since it was a cheat weight...I'll wait until Friday to post. In other news, C-R-A-V-I-N-G Chinese but couldn't savor the fat/calories/sodium with a clear conscience (plus, really trying to keep to 'whole foods' mantra as much as possible). So...made my own! Homemade Wonton Soup and Veggie Baked Eggrolls with a peach chile garlic sauce. Pretty, darn tasty and the family lapped it up. Wonton wrappers not low sodium, but MUCH lower end-product than restaurant bought. Yummo!
