Happy Monday Morning!


I think it is going to be a beautiful day, weather is warming up nicely. Checked out my little garden this morning and the tomatos are really shooting up nicely. Planted some lettuce in pots for the first time, will see how that does. Everything else looks as promising as ever.

So my weekend of increasing my calories as shows an uptick on the scale as expected, no worries about that. Going to stay between 1600-1700 calories to get this metabolism moving and see how that goes for the remainder of the month.

I was going to make the Black Bean Chocolate Brownies yesterday, but had no black beans in the pantry...WHAT??? So, I had read somewhere about a recipe for brownies using prunes, found one here for Cocoa Brownies that used applesauce so swaped that out, added in some coffee (this is a must in any chocolate dessert as it enhances the chocolate flavor but does not make it taste like coffee-Barefoot Contessa tip). They came out really good, you can check them out in my snack entry for yesteray 6/5. Just click on it in my food log, scroll down and in the middle of the page you will see all the ingredients listed. Pretty easy, mix all the wet, sift all the dry, combine and bake 350 for about 30 minutes. I did steep the prunes in the coffee in the microwave and then mash with the back of a spoon to make sort of a paste and then stir it in with the wet ingredients. Check them out, maybe they fit your plan!

Glorious Sunday To You All!


So after some late night chatting with some good buddies here on FS and a review of my food journals and lack of scale movement lately, I concur that I am not eating enough calories. Yikes, who woulda thunk it!! I am pretty good at recognizing when others are not eating enough and encouraging them to eat more....why not in myself??? We are sometimes the worst at taking our own advice. Thank you to my wonderful buddies for setting me straight!!

So, I have eaten more the last couple of days, the scale is up one pound this AM, but that is to be expected until my metabolism gets turned around. My RDI here on FS to lose one pound/week is 1800. My average burn per day according to my BMF is around 2500 for a deficit of around -700/day. I think that is a good place to start. I think I am getting plenty of protein but will have to add in some more carbs and try to not exceed 100g/day. Will have to up the fat with some avocados, butter, almond butter. Probably won't be too hard to do. Must include more at breakfast and lunch and keep my dinners light with salad and protein during the week as we have been doing. Weekends get a little dicey as we are out of our normal routine, hubby has last minute menu changes he would like so I have learned how to change up my plan and accomodate. Just life, that's all!!

Most important.... keep planning, keep journaling, keep reevaluating, keep educating myself about this journey, keep making progress!!! If I stop any of those, in my mind, that will add up to eventual failure (yet again) and I am not going to allow that!!

We had a great day yesterday at mom and dads for the mini-BBQ. Went to my brothers to pick out some stuff we want, knew that was going to be emotional so we lightened the mood, cranked up the turntable, picked thru the massive vinal collection and put on some Jethro Tull-Thick as a Brick! - we laughed and sang as we got the job done!

Today is the usual Sunday, I am going to make the black bean brownies here in the cookbook. Will report out on those later tonight with a cookbook review. Also need another batch of my flax pancakes for breakfast this week, will whip those as well and microwave them to reheat during the week.

Happy Saturday Everyone


Busy day ahead today, off to my parents for a late afternoon BBQ. Will be a difficult day as we are going to my brothers condo so my husband and I can choose the things we want before it gets cleaned out, repainted, carpets cleaned and sold. I haven't been back there since the week of his funeral. Not really looking forward to all these memories of him churning up all this emotion today. Must be done though, all part of the healing process I guess.

I did have my networking lunch this week which went great. I have a few things I am really interested in pursuing but after much conversation with my professional mentor, my boss, my husband and a few of my very best besties, I have decided that right now is not the right time for me to think about a job change. I have a pretty good set up where I am and I think emotionally with all I have going on, I really need the flexibility this offers. A job change like I am going to eventually be making will require all my attention and time and much less flexibility for awhile. So....I am going to put the brakes on the job change for now, keep my feelers out there, keep networking and give myself the extra time I need to get my personal life more stable.

Now that I have that off my shoulders, I can move on to looking forward to seeing my family today, enjoying each others company, having some great food, telling funny stories and whatever else comes out of it. There will probably be around 10-15 of us there so should be fun. I am making a big green salad with lots of veggies in it, also marinating some summer squash to grill, will have a burger (sans bun) an organic sausage, watermelon & cantaloupe. Dining at my moms is easy, she cooks very heart healthy food and has for years because of my dad's heart issues, so there will be no potato salad, mayo laden cole slaw or other things I have to worry about staying away from. I would imagine there will be maybe ONE decadent dessert that she will make for the guests which will probably entail chocolate in some way and I will probably allow myself a spoonful or small piece of whatever it is. I am good with that.
