Crazy Days!

Closing on the house for my biz tomorrow-what a roller coaster. Not sure of the timing but hoping it all works out. Having lunch with my biggest client on Friday and hope to get more intel on how things will go for me, now that they were bought out. I am not sure if anyone knows.

My staff (of one) was out today and I was so busy. It reminded me of how hard I used to work :(

Weighed in today at 125. TOM is here and I am all over the place. I am worried about shifting these five pounds. The longer they stay, the harder they are to shift. My sweet tooth is raging (hormones plus stress). Did get in a very good hike on Sunday with Beast and SU. Of course we hiked to a restaurant on the cliffs and I had two glasses of wine. I think I saw a killer whale but maybe it was just a big dolphin and 2 glasses of wine :)

Trader Joe Staples For Cindyshine

Cindy asked me what I like from TJ's. I don't get the gluteny stuff anymore but it's still great for all the wheatophiles out there. One caveat-TJ's has annoying habit of discontinuing products at exact moment you become a hopeless dependent. Shop at your own risk :)

Whole wheat lavash bread
Whole wheat honey hamburger/hot dog buns

Brown Rice Pasta
Gluten free granola (addictive). I sprinkle a bit on my greek yogurt
Frozen cilantro and basil cubes
Store brand Greek Yogurt
Canned Marinara Sauce (the red and green 28 oz can). I use it for EVERYTHING-great as a pizza sauce
Canned Tomatoes w/roasted green chiles (fantastic for chili)
Turkey-less Turkey Sausages
Meatless Ground Meat (forgot what it's called)-perfect for veggie tacos or chili
Frozen Sweet Potato Fries
Fresh Pizza Dough
French pre-cooked lentils in the vacuum pack-a must have. I make lentil soup and Indian daal in a jiffy.

Today's Indian Recipe is Tandoori.

It's a basic marinade for most proteins, except beef and pork. I do it with shrimp or fish. It's wonderful on chicken. The longer you marinade, the better the result. I grill on the bbq in summer and on the old George Foreman indoors.


Just mix ingredients in a bowl and then pour over the meat/fish/shrimp. I prick the shrimp with a fork to create little tunnels for the marinade. I am not a measurer, so everything is approx.

Ingredients

8 oz Fat Free Greek Yogurt
1 Tbsp Grated Fresh Ginger-Hint: put Ginger root in freezer. It's a lot easier to grate when it's frozen and keeps forever.
2 large cloves garlic, chopped
2 Tbsp (less if you want it less spicy) Tandoori Spice (I get it in Spice aisle at Cost Plus or make my own-let me know if you want recipe)
I Tbsp chopped Cilantro (I use fresh if I have it, if not, I have little frozen cubes I get from Trader Joes).
Juice of 1/2 lemon
1 Tbsp Tamarind Chutney (Cost Plus usually has it). It's not essential. If you use tamarind pulp, make sure you add sugar so it's not super tart.
Drop or 2 red food colouring -I don't add it, but if you want that authentic orange colour, go for it.
Pinch salt


That's it!

I always serve it with Raita and Papadums

Raita-All quantities to taste:

Fat Free Greek Yogurt or Sour Cream
Grated Cucumber (peel and seed)
Chopped Cilantro
Finely chopped red onion
Shredded Carrot (optional)
Cumin
Pinch of salt
Pepper

Mix all together and stick in the fridge. I make a big batch and eat it all week. It's great on salads or as a dip.

I get dried papadums at Cost Plus too and microwave one by one on a paper towel for 25-35 secs until puffed up. They are gluten free and low carb/cal and delicious with the raita and tamarind chutney.
