Fresh pork loin chop, green, yellow and red peppers, onions, and black beans. Surprisingly tasty! I hope all of the fathers and father figures had a wonderful Father’s Day. If you have been a good role model to someone, God bless you; we need more of you! Toodles!

Yay! I believe that I have broken through that plateau of 248. I think I’m back to losing weight at a rapid rate of 15 pounds a week or something like that. LOL! I wish! 246.0 lbs. I am one pound away from dropping 40 pounds. Onward and downward! Toodles!

Still 248 lbs. It’s been a tough plateau, but I’m not worried. It will come off. I finally have a recipe for a kale smoothie I can live with. I actually love the taste of kale - but not in a smoothie. This recipe is smooth, deliciously sweet and hides the taste of kale. I am still using my old trusty one-speed Ninja blender, so I probably don’t get it as fine as some of the more expensive blenders do, but it turned out creamy and delicious. I used unsweetened almond milk, PB powder, Non-fat light yogurt, kale, frozen pineapple, and RX Sugar. Comes in just under 300 calories and kale is one of the most nutritional foods on the planet, and loaded with antioxidants. There are a lot of claims that it raises HDL, lowers LDL, and is a cancer preventative. Doesn’t make sense not to try to include it in my diet. If anyone is interested, I will gladly furnish you with the proportions. I didn’t want to bore everyone with too much information.

It felt like forever breaking that 250 lb. mark! Finally! I know the weight is really coming off about as fast as can be expected, but I want it now! I’m beginning the 3rd week of basically a “couch potato to a 5K” run program. I’m feeling pretty good. I think staying away from red meat has had the most tremendous impact on me so far. My blood pressure is perfect, and my blood work for my recent doctor visit came back excellent across the board. I am blessed considering I am still about 60 pounds above what I would like to be. Anyway, I hope everyone enjoys their Memorial Day Weekend and takes a little time out to remember those who gave their all for us.. Toodles!
