For 3 years I run a lot of errands weekly to multiple stores to stay Keto but...

Well my city got its first confirmed case of community spread of Covid19 last night. (North of San Francisco) 😞. All of our schools are shut down. No gatherings over 10 people allowed. It’s risky to go grocery shopping because I’ve got a medically fragile family member who depends on me in my house & the stores are packed with people trying to prepare to hunker down at home.

I’ve decided to be mentally prepared to have to temporarily go off Keto which requires me to buy fresh veggies a few times a week. I’ve got some pouches of cauliflower rice & spinach, some canned green beans etc but would run out in 2 weeks. Online ordering/ delivery isn’t going well. 70% of what I order gets cancelled because it’s out of stock.

If I do it 😣 I’m going to have to be diligent about exercising those carbs off regularly at home because I’m pre diabetic & also manage numerous inflammation issues through Keto. I haven’t had beans, rice, wheat bread, potatoes - very little shelf stable stuff in over 3 years!

I might start taking tiny bites of those things here & there so my body makes the enzymes & so I don’t have some crazy inflammatory response if I get stuck eating carbs that my body doesn’t seem to want anymore.

I’m not looking forward to all of those health problems like throbbing carpal tunnel at night coming back if I have to temporarily drop Keto 😞

At least we don’t have the summer fires yet & can still enjoy the outdoors.
