Found another way to use frozen Tofu. When tofu freezes the texture is like a sponge. Took a block out in the am. Defrost completely, squeezed out all the water, rip to shreds by hand.
The texture is like a dry sponge.
It'll absorb any flavor you cook it in. Tossed in a sauce of grated garlic, lemongrass, soy & fish sauce to taste, 1 TBS oil. Air fried to a little bit of crispy slightly crunchy. Served on top of stir fried leafy veggie. .with some grilled chicken.
Tofu is low in kcal, but high volume.

Today was a soul soothing day. Final summer harvest, Made half sour pickles, radish kimchi. Tomorrow nappa cabbage kimchi, b/c I'm tired now.

730PM. The kitchen is closed early. For no apparently reason, I put a giant blueberry muffin on my plate & ate it just b/c. I'm not sure how I feel about it still. I just wanted it. They were in the refrigerator all week. I was able to pretend it's not in the refrigerator until today. It was ok, not great, but I wanted to eat it. Not b/c it's amazingly good, b/c it was there. It was more about what I shouldn't have, but I'm going to anyway. I'm supposed to eat to only 80% full, not until I'm satisfied. After each meal I feel like something is missing.
Waiting for the switch to click. In the meantime, definitely, not going to do the giant muffin again. No weight loss is ok for now. But, definitely no more gain.
It's Friday night & all I want is to kick back. With the muffin, I went over 450 kcal.
