Love those sweet potatoes! After watching Chef AJs YouTube on How to Cook for the Week, and following her advice about not fearing carbs, I am baking a pan of sweet potatoes weekly. The starch is what keeps you feeling full. I have been vegan for over a year now and love it. Love my veggies, beans, & grains. Using the Oh She Glows cookbook, the recipes are amazing, though I do not use oil. Substitute small amt of water to saute onions, etc. Really making a diff in keeping weight down.
