The only thing that makes sense is if our hams were cured with sugar. We just picked up a whole hog from the processor last weekend. I remarked it's the best tasting ham we've had in years. Uh huh 😅
Now, I wonder about the sausages. The last processor used only salt, pepper and sage.

I think most ham cures do include some sugar. I always try to find the ones with the lowest carb count, at the store. Maybe call the processor and ask about the sugar?

I could call the processor, but they gave us half off due to misplacing our order. I think it's best if I just avoid the ham. It is so pink and moist all the way through and tastes so good, it HAS to be cured with sugar. Next time, I will talk with them myself. Hubby just doesn't know what to say, even though he thinks he does.
