Lifelong carnivore is quickly becoming a Vegan. Currently, I have a fair amount of Haddock, Salmon and a small amount of Chicken left, that I will slowly consume. But I am truly enjoying my transition to a "Low Fat Whole Foods Plant Based" diet.

Pictured below a Vegan Pizza and a nice salad.

The Pizza is simple: A 12" whole wheat Pita. I use a Pita because it is a fraction of the calories, Fat, Carbs of a standard pizza crust, and it is similar to a thin crust pizza. Top it with tomato paste. Yes tomato paste. It's full of sweet tomato flavor and doesn't turn the Pita or Pizza crust soggy. If you want to try a meat substitute, the Pizza pictured had a nice layer (55g) of Yves Italian seasoned ground round on it. It's a soy product that looks, and has the same mouth feel and a similar taste to ground beef. Top it with Veg of your choice. I used garlic, mushrooms, olives, hot pepper rings. Red, yellow and orange bell pepper and sliced Roma Tomato's. Kind of a Mexican Pizza. The yellow sprinkles on top is a product called "Nutritional yeast". It taste's like cheese. I went with that product because it can be used in many ways to make cheese type sauces, and from what I have read, Vegan cheese you buy in the store doesn't melt. So I wasn't going to waste the money buying that product.

Frankly, traditional pizza's weren't drowned in cheese anyway.

The entire Pizza is 329 calories and 5.8g of Fat. However 4g of fat is the olives
so they can be omitted for a really low fat pizza. The Yves ground round was 60 calories and 0 fat and is optional as well. So for the same calories in a single slice of traditional pizza, you get to eat the entire pizza. And it's tasty !

I dropped the weight off twice before. The first time, I didn't maintain it. The second time was followed by a cancer diagnosis, dealt with that and off work for almost two years, a long recovery and the weight came back on. This time, I started out with my usual low fat, low calorie and modest carb approach and then started learning nutrition again and started looking at some other options like vegetarian, and pesco-vegetarian, and stumbled across the benefits of a whole food plant based diet. Within 10 days my high blood pressure was gone, so I'm off of those meds. I had excema on my elbows which several months of hydrocortisone cream couldn't resolve, and that's disappeared completely. My fasting blood sugar had crept up to 6.3 mmol/L which is still normal, but it was creeping up, that's back down to 4.8 mmol/L. As for artheroesclerosis, my circulation is slowly improving. I'm down 40 lbs in 8 weeks. I haven't even started working out yet. So the motivation is restoring my health and a whole food plant based diet is doing the job.

Sounds yummy. Id like to hear what you think about the difference in taste between the almond crust and the flour one. We have used the nutritional yeast flakes for years/? It is great on so many things.!I don’t know if you know about the Holley hock Nutritional yeast dressing. That where my love for year began. Yeast goes good with anything/ when in a rush Ill just put yeast flakes, bit of balsamic vinegar with other salad fixings and that works a good salad too!...,

Hi Aurora, I have never tried an almond crust. Normally, I wouldn't consider that unless I was making a tart/pie type of desert. I'll have to look into it. I like the Pita simply because it's somewhat comparable to a thin crust, it's fast and easy to make. I would like to try a cauliflower crust at some point. I still have a lot to learn about Nutritional Yeast - I just started using it.
