What the heck? Why is my calorie count going down but my weight is remaining the same or increasing slightly? I shouldn't weigh myself so often, but STILL!

It could be a lot of different things. But if you were losing when you ate more, then raise your caloric intake. The drop in calories may have slowed your metabolism down. It could be too much sodium in food. Its hard to say. Make sure you are getting enough lean protein at each meal. High protein, high fiber will keep you fuller longer and help you lose weight better than most other foods. Keep changing things up. Just remember the scale fluctuates hourly because of our water weight and many things can factor in to change the water weight (including things that don't have anything to do with food).

It's all the obvious stuff as Suzi161 says. Check your calorie count just to make sure - and stop weighing yourself too often. Weight fluctuates due to water retention - so once a week on the scales - no more than that - and put the scales in exactly the same place each week - they will record differently if you place them on carpet, floorboards, tiles etc.
Try making sure you do some walking and light exercise each day - keeps the metabolism going. When you reduce your food intake the body reduces its metabolic rate - so you need to compensate by doing a little exercise - walking a bit is enough - to raise it back up again.
Count the calories - work your metabolic rate - and weigh-in only weekly and weight will shift off - it just always takes longer than putting it on!!!
