Need to use Pam olive oil spray instead of coating veggies in EVO. Roasted sweet potato wedges and whole okra in an 400+ degree oven for about 30-35 minutes. It was delish, but could have used less oil.
Woke up late. Gotta work fast to catch up now.

Yes, good point. As after you add it all up you can be into several calories of just oil. I like to use the spray or sometimes just foil and broil or bake my veggies. Yummy. Then I just season them to whatever flavor I want.

Healthy veggies are a godsend. I am generally such a carnivore, but could benefit from some meatless meals more often. And it is shocking how many calories are in oil. Even "healthy" oils like EVO.
