Holding steady. I was sort of expecting a slight gain due to taking in a little more salt than usual last night. We had bought a buttload of okra at the farmers market, and because I get tired of the usual stewed tomato/okra combo, I found a recipe for roasting it with a little olive oil spray and salt. They were supposed to be crisp like french fries, but they were a little more leathery in texture. Still, pretty tasty and not slimy at all.
I went to the eye doc yesterday and I'm still not progressing into glaucoma even without Lumegan.The dilating drops do a number on me though. I stayed blurry blind most of the night and couldn't do much work. Being sensory deprived gave me a scary preview of old age.

You can make a Jambalaya stew with okra, canned diced tomatoes, peppers, onions, shrimp, other shellfish (with some Cajun spice). It's both tasty and healthy. Just use a vegetable oil spray to sauté the vegetables and skip the roux. The stew will thicken on it's own from the okra. If not, just stir in a little Gumbo filé.

Mmmm... now you've got me thinking about shrimp. I do love a good shrimp gumbo (and dammit I love roux!), but I will want to serve it on white rice. I wonder if it would be as good on quinoa instead. Quinoa has turned into my white rice substitute.

I actually skip the rice and just eat it as a stew. Sometimes I have a little nibble of cheese with it to round it out.
