Well, here it is, Monday already. Memorial Day here in the US, and I'm honoring my dad who spent 28 years serving my country. We had a joint cookout with the nail salon next door to my work on Saturday. Besides the usual hot dogs and hamburgers, there were Vietnamese marinated beef rib tips (SO good!!), shrimp skewers, and corn on the cob. I was busy, so I didn't get to really sit and eat, but I went back again and again for a quick strip of the rib tips. I did try some corn, but ended up eating only about 1/3 of it. I don't know if I've lost my taste for it, or if it just wasn't very good corn... This Friday is my 61st birthday, so I've decided to drive down to Orlando to visit my sister. She's taking me to Disney World on my b'day! I love Disney! She has also embraced a low-carb lifestyle, so we can support each other through the perils of amusement park food. Her husband got a post-retirement job at the Magic Kingdom, and will be working that day. She said we could go see him and laugh at his uniform. LOL! Apparently, it's quite colorful. There is a good likelihood of thunderstorms there this weekend, so I don't know if that will affect our plans. At least it will be cooler than a bright, sunny day would be. :) My weight this week has been all over the place, with yesterday being the highest at 165. Today, it's back down to where it was last week. So I'm back in the green. Yay! Have a good Monday, friends! ~Kes
