Somewhat confused on how to eat 20 nc per day with 12-15 of those nc being vegetables so I hope I can do this the right way. Exercise chart doesn't cover what I do for a living 8 hours a day--babysitting. Can't figure out how to rate running after a 14 month old, picking her up, carrying her, picking up toys, etc.

You are better off weighing your food than using "cups". The spinach seems a little off, but if you weighed it you would get better numbers. If you like onions and peppers, those are great, moderately high carb veggies to add. Brussle sprouts, cabbage and snow peas are also great. Its less about volume than quality. .....The caloriecount.com website indicates that babysitting is approx 170 calories per hour for a 150# person.

Oh yea...your calories are MUCH too low. One of the biggest problems that people have when they first start Atkins is that they don't get enough calories, and as a result, they don't loose weight. The MINIMUM recommended level is 1500-1800 calories.
