I am won over by my homemade protein bars. They hold my hunger for about 5 hours or so. I like that it helps increase my total fiber intake too. So, my tummy feels much better. :)

Sorry I didn't notice there were people asking about the recipe until now. This is what I make them out of. flax meal (2/3 cup), almond meal flour (1/2 cup), pb2 (9 tbls), Cacao (chopped)(.5 oz), polaner sugar free raspberry preserves (1 tbls), watkins caramel extract (1 tsp), 1/4 cup water (for pb2), 1/4 cup water. Mix Pb2 with water and raspberry preserves. Add water by the tablespoons. May only need 3 tbls instead of a whole 1/4 cup. Just depends. Then add all of the other ingredients in. Mix together. Then sit for a couple of minutes to thicken up. It will be sticky. Separate into 6 equal parts. I weight the total mix, divide by six, then weigh each portion to make sure I get the correct nutrition info each time. Then wrap them up in wax paper and freeze them. Keep in freezer. I keep changing it a little, so these are a little different from my original post. About 3.7 net carbs and 157 calories, 7 grams of fiber. I used organic peanut butter before and that is just as good. Sometimes I use cinnamon and splenda instead of jam. vanilla instead of caramel. No cacao, yes cacao. Play around with it until you find something you like. I always keep the flax and almond meal the same. If you use peanut butter I believe it would be 1/2 cup.

Sounds very interesting, and tasty; thanks for posting your recipe. :-) I have the Polaner blackberry preserves, which I think would be a nice addition/ substitution for the raspberry preserves. I'm glad you said that organic peanut butter could be used instead of pb2; I'm thinking these bars will satisfy my hankering for a pb & j sandwich. :-)
