I'm really enjoying cooking! This new adventure of cooking and blogging with pics is a fun thing to look forward to, and definitely keeps me coming home straight instead of veering off to that Chinese joint!!
TOnight I felt like a good, solid, meal after the no-breakfast and light lunch. So here's what I had...
Breakfast: Just coffee with cream and 3 splenda (3c)
Lunch: Homemade broccoli stir fry with lemongrass tofu sautee from yesterday (
2c?)snack: atkins bar (
3c)Dinner:Fettucini Alfredo Tofu noodles with mushooms, basil, garlic, and parmesan (Fetuchini alfredo knorr powder (6c),heavy cream, butter, parmesan (2c), noodles (2c) made 2 servings; so only
5 c for the 1 seving of dinner!)Roasted Fennel (with olive oil, Rosemary, and Parmesan) (3c for fennel?)Tofu Miso soup (with scallions and seeweed) (5c)
Total: about 21 carbs (plus some for broccoli and mushrooms)
And OMFG!! Everything was sooo delicious, I was swooning! The fettucini alfredo tasted so good, I literally lICKED my plate! And only 5 carbs!! The roasted fennel was so soft, and meaty...and the fragrance of the slight licoricy flavor infused with rosemary was spectacular--the perfect airfreshner for the kitchen too! And the hot tofu miso soup hit the spot on a winter night! I felt so content having eaten fresh produce, no preservatives, and beaitfiul colors...unfortunuely the pics don't do justice as they are my lousy camera phone pics, but man! these low-carb recipes are totally awesome!
(only downside was the storebought tofu miso soup was high in salt and wish I could cook it at home instead..I seem to be getting a little more salt from the asian foods than I care for..making me feel a little bloated! :( Well, at least I'm losing weight on this "diet" so it's all good!
Exerice: Kicked butt in my spinning class for 60 mins. Heart rate stayed between 130-158. Lots of jumps on the bike, hill incline climbing, 6 sets of fast 20-sec sprints, and other such stuff got me totally sweating! Wanted to go do a whole set of weights in the evening, but I bailed again!
